Dairy free, cheesy flavoured sauce
(Sarah Wilde)
The easiest way to do this is in a blender, but if you don’t have one just blend the flour with a little milk first, then add the rest of the milk and the other ingredients.
In a blender place: 1 ¼ cups of Soya milk (13 fluid ounces approx), ¼ cup plain flour, 1 dessertspoon tamari, 1 generous dessertspoon tahini and one teaspoon Dijon mustard. Blend it together. Pour into a pan and bring almost to a boil over a low heat stirring all the time. When it almost boils turn heat to a whisper and cook, still stirring for a couple of minutes. Remover from heat and add ¼
cup of nutritional yeast. Stir and taste – you may need to add more mustard or tamari or more yeast. If it’s too thick add a little soya milk and re-heat.
I find it doesn’t make a noticeable difference whether you use sweetened or unsweetened soya milk in this.
